Ofada Sauce Recipe

Ingredients:  few ripe tomatoes, unripe rodo (scotch bonnet), unripe shombo (cayenne pepper), Iru ( fermented and processed locust beans also known as Parkia biglobosa), red palm oil, cow meat, dried or smoked fish ( as desired). Onions, seasonings as deisred.

Using medium heat on Gas cooker;

Step 1; rinse and blend the tomatoes, unripe rodo, unripe shombo and onions in a blender .

Step 2; Wash meat and cook( with desired seasonings) until desired softness is attained.

Step 3; De-bone and rinse the desired fish.

Using medium heat on Gas cooker;

Step 4; Put a pot on top of the gas cooker and add some red palm oil, leave for about 2 minutes. Then add the blended tomatoes and peppers. Allow to cook for about 5-10 minutes. Add the cooked meat, onions, dry or smoked fish, desired seasonings to taste. Stir at intervals, cook for another 25-30minutes.
